Description

2 lbs tri-tip steak, cut into 1 ½-inch cubes

1 pineapple, cut into 1 ½-inch chunks

2 red bell peppers, cut into 1 ½-inch pieces

1 large sweet onion, cut into 1 ½-inch chunks

⅓ cup low-sodium soy sauce

¼ cup brown sugar

4 cloves garlic, minced

2 tbsp rice vinegar

1 tsp sesame oil

1 tbsp honey

1 tbsp ketchup

1 tsp sesame seeds, for garnish

2 tbsp green onions, chopped for garnish


Instructions

  1. Cut the tri-tip steak into 1 ½-inch cubes and place them in a large mixing bowl or resealable bag.
  2. In a small bowl, whisk together soy sauce, brown sugar, garlic, rice vinegar, and sesame oil. Reserve one-third of this mixture in the refrigerator for later.
  3. Pour the remaining marinade over the beef cubes, tossing to coat evenly. Cover and refrigerate for at least 4 hours or overnight.
  4. Chop the pineapple, red bell peppers, and sweet onion into similar-sized 1 ½-inch pieces.
  5. Thread the skewers alternately with steak, pineapple, red pepper, and onion.
  6. Mix the reserved marinade with honey and ketchup to make a glaze.
  7. Preheat your grill to medium heat.
  8. Grill the skewers, turning every 2–3 minutes, for about 15 minutes total. During the last few turns, baste the skewers with the glaze.
  9. Once the meat reaches 145–150°F for medium doneness, remove from the grill.
  10. Garnish with sesame seeds and chopped green onions. Serve warm.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling.

Use metal skewers to avoid burning altogether.

Let steak marinate overnight for maximum flavor.

Use tamari for a gluten-free version.
