Description
Hamburger noodle soup is a hearty, flavorful one-pot meal made with ground beef, egg noodles, vegetables, and a savory tomato-beef broth.
Ingredients

1 lb lean ground beef
1/2 medium yellow onion, chopped
3 tsp minced garlic
32 oz low sodium beef broth
28 oz tomato sauce
14.5 oz petite diced tomatoes
10 oz frozen mixed vegetables (or 12 oz)
2 tsp Italian seasoning
1/2 Tbsp Worcestershire sauce
Salt and pepper, to taste
2 1/2 cups egg noodles
Instructions
- In a large pot or Dutch oven, cook the ground beef and chopped onion over medium-high heat until the beef is browned and no longer pink. Break up the meat with a spatula as it cooks.
- Stir in the minced garlic and cook for an additional 1–2 minutes until fragrant. Drain any excess grease and return the pot to the stove.
- Add the beef broth, tomato sauce, diced tomatoes, frozen mixed vegetables, Italian seasoning, Worcestershire sauce, salt, and pepper. Stir well and bring the mixture to a boil.
- Once boiling, add the egg noodles. Reduce the heat to medium-low, cover the pot, and simmer for 10–15 minutes until the noodles are tender.
- Serve hot with your favorite bread or crackers.
Notes
To make in a slow cooker: Brown beef and onion first, then add everything except noodles. Cook on low 4–6 hours. Add noodles 20 minutes before serving.
