Ingredients
4 medium sweet potatoes
2 tbsp olive oil, divided
1 lb ground turkey
1 small onion, diced
2 garlic cloves, minced
1 red bell pepper, diced
1 cup canned black beans, drained and rinsed
2 tsp taco seasoning
Salt and pepper to taste
2 ripe avocados
1/4 cup sour cream
Juice of 1 lime
Fresh cilantro, for garnish

Instructions
- Bake the potatoes
Preheat oven to 400 °F (200 °C). Rub sweet potatoes with olive oil and prick with a fork. Bake on a sheet for 45–50 minutes, until fork‑tender. - Cook aromatics
Cook the onion and garlic in the skillet until softened and fragrant, about 3 to 4 minutes. - Brown turkey
Add the ground turkey, using a spatula to break it into small crumbles as it cooks. Cook until no longer pink, about 6–8 minutes. - Add flavor
Stir in diced red bell pepper, black beans, taco seasoning, salt, and pepper. Continue cooking for 5 more minutes, allowing the flavors to meld together. - Prepare the avocado crema
Blend the avocados, sour cream, and lime juice in a food processor until smooth and velvety. - Assemble
Remove sweet potatoes from oven and cool slightly. Slice each baked sweet potato lengthwise and gently mash the inside with a fork to create space for the filling. - Fill and garnish
Spoon the turkey‑bean mixture into each potato. Spoon on a generous amount of avocado crema, then finish with a sprinkle of fresh cilantro and optional radish slices. - Serve warm and enjoy immediately!
