Description

Southwest Ground Beef and Sweet Potato Skillet is a fast, family-friendly dinner packed with bold spices, lean protein, and tender sweet potatoes. This easy one-pan meal is perfect for busy weeknights and comes together in about 30 minutes.


Ingredients

1 tbsp olive oil

½ cup diced onion

1 lb lean ground beef

5 tsp chili powder, divided

2 tsp ground cumin, divided

Salt and pepper to taste

1 tsp minced garlic

2 cups peeled, diced sweet potatoes

14.5 oz can fire-roasted diced tomatoes

4 oz can diced green chiles

¼ cup water

½ cup shredded cheddar cheese

Chopped cilantro for garnish (optional)


Instructions

  • Brown the Beef & Onions: Start by heating olive oil in a large skillet over medium-high heat. Add the ground beef and diced onions, breaking the meat apart with a wooden spoon as it cooks.
  • Season: Add 3 teaspoons of chili powder, 1 teaspoon of cumin, and season with salt and pepper. Cook until the beef is nearly browned through.
  • Add Garlic: Stir in the grated garlic and cook for one more minute. Transfer the beef and onion mixture to a plate and wipe the skillet clean.
  • Cook Sweet Potatoes: In the same skillet, add the diced sweet potatoes, fire-roasted tomatoes, green chiles, water, the remaining 2 teaspoons of chili powder, 1 teaspoon of cumin, salt, and pepper. Stir to combine.
  • Simmer: Cover and let it simmer on low heat for about 20 minutes, or until sweet potatoes are tender.
  • Combine: Once the sweet potatoes are tender and everything is cooked through, return the beef and onion mixture to the skillet. Stir well to bring all the flavors together.
  • Top with Cheese: Sprinkle cheddar cheese over the top, cover, and let it melt for about a minute.
  • Serve: Garnish with chopped cilantro if desired. Serve hot.

Notes

Dice sweet potatoes evenly for faster cooking.

Spice level can be adjusted with cayenne or chipotle powder.

Ground turkey or plant-based meat can be used instead of beef.

Store leftovers in the fridge for 3–4 days or freeze for up to 2 months.
