3 medium ripe peaches, halved and pitted
1 tsp pure vanilla extract
1 (14 oz) can full-fat coconut milk, chilled overnight
1/4 cup chopped walnuts
Ground cinnamon, to taste
Instructions
- Preheat your grill to medium-low heat.
- Prepare the peaches by cutting them in half and removing the pits.
- Grill the peaches, cut-side down first, for about 3-5 minutes on each side or until tender and grill marks appear.
- Make the coconut cream: Open the chilled coconut milk can, scoop out the solid cream on top, and place it in a mixing bowl.
- Whip the cream with a handheld mixer for 1-2 minutes until fluffy. Add the vanilla extract and mix until combined.
- Plate the peaches: Place the grilled peach halves on a serving plate.
- Top with coconut cream, a sprinkle of cinnamon, and chopped walnuts.
Notes
Use ripe but firm peaches for the best texture. Coconut cream can be made ahead and re-whipped before serving. Store leftovers separately in the fridge.
