Ingredients
For the Meatballs:
Nonstick cooking spray
1 egg
3 garlic cloves, minced
1/3 cup finely minced white onion
1/4 cup panko breadcrumbs
2 teaspoons fresh dill, chopped (or 1 teaspoon dried dill)
1 1/2 teaspoons dried oregano
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 pound ground chicken
For the Herby Yogurt Sauce:
1 cup Greek yogurt
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill
1/4 teaspoon ground black pepper
Optional Garnish:
1/2 cup crumbled feta cheese
Additional chopped parsley and dill
Instructions
Preheat and Prepare: Heat your oven to 350°F and lightly coat a rimmed baking sheet with nonstick spray.
Mix Ingredients: In a large bowl, whisk the egg until smooth. Stir in garlic, onion, breadcrumbs, dill, oregano, salt, and pepper. Add the ground chicken and fold the mixture together gently until just incorporated.
Form Meatballs: Shape the mixture into balls slightly smaller than golf balls (around 16-18 meatballs total). Place on the prepared pan. Don’t stress about perfection—a rustic shape is just fine.
Bake: Cook in the oven for 16 to 18 minutes, or until the meatballs reach an internal temperature of 165°F.
Optional Broil: To enhance the appearance and add a touch of crispiness, broil the meatballs on high for 2 to 4 minutes, keeping a close eye on them to avoid burning.
Make the Sauce: Combine Greek yogurt, parsley, dill, and pepper in a small bowl. Stir until smooth.
Serve: Garnish meatballs with feta and herbs if desired, and serve with the yogurt dipping sauce.
