For the Dough:

1/2 cup warm whole milk

2 tbsp granulated sugar

2 1/4 tsp active dry yeast

4 tbsp melted unsalted butter

1 large egg

1 large egg yolk

2 cups all-purpose flour

1 tsp kosher salt

For the Filling:

4 garlic heads, tops trimmed

1 tbsp olive oil

4 tbsp softened butter

1/4 cup chopped parsley

1/2 tsp kosher salt + ground black pepper

2 cups shredded mozzarella

For the Topping:

2 tbsp melted butter

1 tbsp chopped parsley

1 tbsp grated Parmesan (plus extra for garnish)

12 tsp minced garlic


Instructions

  1. Activate the Yeast: Warm the milk to about 110°F. Combine with sugar and yeast in the bowl of a stand mixer. Let it sit for 7-10 minutes until bubbly. (Skip this step if using instant yeast.)
  2. Make the Dough: Add melted butter, egg, egg yolk, flour, and salt. Using a dough hook, knead for 6-8 minutes until smooth. If the dough is too sticky, add a little flour.
  3. Let the Dough Rise: Shape the dough into a ball and transfer it to a greased bowl. Cover with a clean kitchen towel and let it rise in a warm place for 1-2 hours, or until it doubles in size.
  4. Roast the Garlic: As the dough rises, preheat your oven to 400°F. Drizzle the garlic heads with olive oil, wrap them in foil, and roast for 30-40 minutes until tender and golden. Allow to cool slightly before squeezing out the cloves.
  5. Prepare the Filling: Blend roasted garlic into a paste. Roll dough into a 13×8-inch rectangle. Spread softened butter, then garlic paste, parsley, salt, pepper, and mozzarella.
  6. Roll & Slice: Roll tightly from the long side. Pinch to seal. Slice into 9 equal pieces.
  7. Second Rise: Place rolls in a parchment-lined 9×9-inch pan. Cover and let rise again for 1-2 hours until puffy.
  8. Bake: Preheat oven to 350°F. Bake rolls for 30-35 minutes until golden.
  9. Add Topping: Mix topping ingredients. Brush over hot rolls. Add extra Parmesan if desired. Serve warm.

Notes

Make ahead by refrigerating shaped rolls overnight. Let come to room temp before baking. Store leftovers in an airtight container for up to 4 days or freeze for up to a month.
