Ingredients
For the Dough: all-purpose flour, granulated sugar, aluminum-free baking powder, cinnamon, nutmeg, kosher salt, cold unsalted butter, shortening, milk, frying oil
For the Filling: thawed peaches, granulated sugar, kosher salt, lemon juice, vanilla extract
For the Glaze: powdered sugar, kosher salt, vanilla extract, milk
Instructions
- Prepare the Dough: In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. Work in the butter and shortening using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized pieces. Slowly add the milk, starting with 1/2 cup, and mix until the dough is just moistened and holds together. Wrap in plastic and chill for 1 to 4 hours.
- Make the Filling: In a medium saucepan over medium heat, combine peaches, sugar, salt, and lemon juice. Once the mixture begins to boil, mash the peaches slightly and lower the heat. Simmer until thickened, about 15 minutes. Remove from heat, stir in vanilla, and let cool.
- Prepare the Glaze: Whisk powdered sugar, salt, vanilla, and milk until smooth. Set aside.
- Assemble the Pies: Roll chilled dough to 1/4 inch thickness. Cut eight 4-inch circles. Fill each with 1 tablespoon of peach mixture. Moisten edges with water, fold over, and crimp with a floured fork.
- Fry the Pies: Heat oil in a Dutch oven to 350°F. Fry 3-4 pies at a time for 4 minutes, flipping halfway. Drain on a wire rack over paper towels.
- Glaze and Serve: Cool for 5 minutes before drizzling glaze. Enjoy warm or at room temperature.
Notes
Don’t overfill pies. Use a thermometer to keep oil at 350°F. Glaze just before serving for the crispiest texture.
