- 1 lb boneless skinless chicken breasts
- 2 cups Minute rice (white or brown)
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can water
- 1 tbsp butter, for greasing pan
- 1 envelope Lipton onion soup mix
- Optional: shredded cheddar cheese, frozen veggies, diced chicken
Instructions
- Preheat oven to 350°F. Grease a 9×13 baking pan with butter.
- In a mixing bowl, combine the cream of chicken soup, cream of mushroom soup, water, and rice until well blended.
- Pour the rice mixture into the prepared baking pan. Place chicken breasts evenly on top.
- Sprinkle the Lipton onion soup mix over the chicken breasts.
- Cover the pan tightly with foil and bake for 1 to 1½ hours until the chicken is fully cooked and the rice is tender.
- Optional: For extra flavor, uncover and add shredded cheddar cheese in the last 10 minutes of baking.
- Let the dish rest for 5 minutes before serving.
Notes
- For diced chicken, add 1 lb cubed raw chicken directly to the rice mixture. Reduce baking time by 20-30 minutes.
- Substitute with different cream soups, add frozen veggies, or use boneless chicken thighs for a twist.
- Leftovers can be stored in the refrigerator for 3-4 days or frozen and reheated.
