Description
Eggnog bread is a festive quick bread filled with warm spices and topped with a sweet eggnog glaze. Moist, flavorful, and easy to make—ideal for breakfast, dessert, or holiday gifting.
Ingredients
For the bread:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup eggnog
1/2 cup vegetable or canola oil
2 large eggs, slightly beaten
1 teaspoon vanilla extract
For the eggnog glaze:
1 cup powdered sugar
3 tablespoons eggnog
1/2 teaspoon vanilla extract
1/8 teaspoon ground nutmeg
Instructions
- Preheat your oven to 350 degrees F. Grease an 8 1/2 x 4 1/2 inch loaf pan with cooking spray and set aside.
- In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, cinnamon, and nutmeg until well combined.
- In a separate bowl, mix together the eggnog, oil, eggs, and vanilla extract.
- Slowly add the wet mixture to the dry ingredients, stirring gently until everything is just combined. Avoid overmixing.
- Pour the batter into the prepared loaf pan and tap it lightly on the counter to even out the surface.
- Bake for 65 to 70 minutes, or until a toothpick inserted in the center comes out clean. If the top begins to brown too quickly, tent it loosely with foil and continue baking until fully done.
- Let the bread cool in the pan for about 15 minutes, then run a knife along the edges and transfer it to a wire rack to cool completely.
- While the bread cools, whisk together all glaze ingredients in a small bowl until smooth.
- Drizzle the glaze over the cooled bread. Slice and enjoy!
Notes
Use full-fat eggnog for the best texture.
If the top browns too quickly, loosely cover with foil.
Let the loaf cool completely before glazing for clean presentation.
Freezes well without glaze for up to 3 months.
