Ingredients
1¼ lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 teaspoon Italian seasoning
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
⅛ teaspoon paprika
1 tablespoon olive oil
3 tablespoons unsalted butter, divided
1½ tablespoons minced garlic (about 4 cloves)
2 tablespoons finely chopped fresh parsley
Instructions

Preheat a large non‑stick skillet over medium‑high heat.

Toss the chicken pieces with the Italian seasoning, salt, pepper and paprika so that they are evenly coated.

Add 1 tablespoon olive oil and 1 tablespoon of the butter to the skillet. Tilt the pan so it coats the surface.

Add the seasoned chicken to the pan in an even, single layer. Don’t crowd the pieces—this ensures they brown rather than steam.

Let the chicken cook until the bottom side is nicely golden brown (about 3 minutes), then flip and cook for about 2 more minutes or until nearly cooked through. You may need to cook in batches if your pan is crowded.

Stir in the last 2 tablespoons of butter, then add the minced garlic and freshly chopped parsley. Cook for about 1 minute longer, scraping the bottom of the skillet to release all the tasty browned bits. Make sure the chicken is fully cooked.
