5 ripe but firm bananas
1 tablespoon plain flour
60 g unsalted butter
110 g light brown soft sugar

Crumble Topping
80 g rolled oats
90 g plain flour
45 g light brown soft sugar
50 g granulated sugar
½ teaspoon ground cinnamon
110 g unsalted butter diced
30 g walnut pieces
Instructions
- Start by preheating your oven to 180°C or 160°C fan. Lightly grease a baking dish or individual ramekins to prevent sticking and ensure easy serving later.
- Peel the bananas and cut them into chunky pieces, about 2.5 cm in size. Place them in a bowl and toss gently with flour. This step helps thicken the caramel sauce as it cooks.
- In a saucepan over medium heat, melt the butter. Add the brown sugar, lemon juice, vanilla extract, cinnamon, and salt. Stir continuously as the mixture heats and begins to bubble. Let it simmer for about two minutes until it forms a glossy syrup.
- Remove the pan from heat and gently fold in the banana pieces. Make sure each piece is coated in the caramel mixture. Transfer everything into your prepared baking dish and spread it evenly.
- For the crumble topping, combine oats, flour, both sugars, and cinnamon in a mixing bowl. Add the cold diced butter and rub it into the dry ingredients using your fingertips until the mixture resembles coarse crumbs. You want a mix of fine crumbs and a few larger buttery chunks for texture. Stir in the walnut pieces.
- Sprinkle the crumble topping evenly over the banana mixture. Place the dish in the oven and bake for about 25 minutes, or until the top is golden brown and the filling is bubbling around the edges.
- Let the crumble cool slightly before serving so the filling can set a little. Serve warm for the best flavor and texture.
