Description

Ingredients

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 cups all-purpose flour

1 tsp baking soda

½ tsp salt

34 medium ripe bananas (or 2 large), mashed

1 tsp vanilla extract


Instructions

  1. Prepare the Pans
    Preheat your oven to 350°F (175°C). Line two 8×4-inch loaf pans with parchment paper or grease them generously.
  2. Mash the Bananas
    In a small bowl, mash the bananas with a fork until smooth, leaving some small chunks for texture.
  3. Cream Butter and Sugar
    In a mixing bowl, beat the butter and sugar together until light and fluffy using a hand or stand mixer.
  4. Add Eggs
    Add the eggs individually, beating thoroughly after each to fully combine.
  5. Mix Dry Ingredients
    Combine the flour, baking soda, and salt in a different bowl and whisk until evenly blended.
  6. Combine All Ingredients
    Slowly add the dry mixture to the wet mixture, stirring just until combined. Fold in the mashed bananas and vanilla extract.
  7. Bake
    Divide the batter evenly between the prepared pans. Bake for 35 to 40 minutes, or until a toothpick inserted in the middle emerges clean.
  8. Cool
    Let the loaves rest in the pans for 5 to 10 minutes before moving them to a wire rack to cool fully.

Notes

Use very ripe bananas for best flavor and moisture.

Tent with foil if tops brown too quickly.

Store covered at room temperature up to 3 days, or freeze up to 3 months.
