4 boneless, skinless chicken breasts

1 teaspoon chicken seasoning blend

2 tablespoons olive oil, divided

¼ cup honey

1 tablespoon Dijon mustard

1 tablespoon yellow mustard

1 tablespoon wholegrain mustard

½ teaspoon white vinegar

⅛ teaspoon paprika

4 sprigs fresh rosemary (optional)


Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Sear the chicken: Warm 1½ tablespoons of olive oil in a skillet over medium heat. Sprinkle the chicken breasts with your seasoning blend and brown them for around 2 minutes per side, until they develop a golden crust.
  3. Make the sauce: In a small bowl, whisk together ½ tablespoon olive oil, honey, Dijon mustard, yellow mustard, wholegrain mustard, white vinegar, and paprika until well combined.
  4. Transfer to baking dish: Place the seared chicken in the prepared baking dish. Pour the honey mustard sauce over the chicken, flipping each piece to coat fully.
  5. Add herbs: Nestle the rosemary sprigs between the chicken breasts.
  6. Bake covered: Cover the dish with foil and bake for 20 minutes.
  7. Bake uncovered: Remove the foil and bake for another 15 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Rest and serve: Allow the chicken to rest for 5 minutes before slicing or serving. This resting time helps the juices redistribute for a more flavorful bite.
