4 boneless, skinless chicken breasts
½ cup honey
¼ cup low-sodium soy sauce
4 cloves garlic, minced
1 tsp ground ginger
Salt and pepper, to taste
Instructions
- Prepare the Chicken
Arrange the chicken breasts evenly at the bottom of your slow cooker in a single layer. - Mix the Sauce
Combine honey, soy sauce, minced garlic, ground ginger, salt, and pepper in a bowl, whisking until smooth. - Combine & Cook
Pour the sauce mixture over the chicken. Cover and cook on low for 3–4 hours or until the chicken is cooked through and tender. - Finish & Serve
If desired, take out the chicken, shred it using two forks, then mix it back into the sauce to coat thoroughly. Serve hot over rice, noodles, or vegetables.
Notes
Use chicken thighs for extra juiciness.
Add chopped veggies during the last hour for a one-pot meal.
To thicken the sauce, stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water).
Double the sauce if you like extra to drizzle over sides.
