- 1 teaspoon Italian seasoning
- ½ cup grated parmesan (Parmigiano-Reggiano)
- 4 ounces cream cheese, warmed
- ½ cup heavy or whipping cream
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- In a large saucepan over medium heat, cook the Italian sausage and diced onion until the sausage is browned and the onion is soft. Drain any excess grease.
- Add the garlic, fennel, and red pepper flakes. Stir and cook until fragrant, about 1 minute.
- Pour in the chicken broth, tomatoes, pasta, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 6-8 minutes, or until pasta is al dente.
- Stir in the parmesan, cream cheese, and heavy cream. Cook for an additional 3-5 minutes, until cheeses are melted and the soup is creamy.
