Ingredients
Scale
- 1 lb Italian sausage
- ½ cup diced onion
- 2 cloves minced garlic
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 4 cups chicken broth
- 1 (14.5 ounces) can petite diced tomatoes
- 8 ounces ditalini pasta
- 8 ounces cream cheese, softened
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil, for garnish
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into crumbles until browned. Drain excess grease.
- Add the diced onion, Italian seasoning, salt, and pepper, cooking for 1-2 minutes until onions soften. Stir in the garlic and cook for another minute.
- Pour in the diced tomatoes and chicken broth. Add the pasta and bring everything to a boil. Cook for 8 minutes or until the pasta is al dente.
- Lower the heat to medium and stir in the softened cream cheese and Parmesan cheese. Cook for 5 minutes, allowing the cheese to melt fully.
- Serve hot, garnished with fresh basil.
Notes
- To prevent mushy pasta, cook until just al dente. The pasta will continue to cook in the broth.
- Soften cream cheese before adding it for smooth melting. Cutting it into cubes speeds up the process.
- If you want a thinner soup, add a splash of heavy cream or extra broth.
