Ingredients

3/4 cup boiling water

1 packet sugar-free gelatin (4-serving size, any flavor)

1/2 cup cold water

Ice cubes to bring total chilled water to 1 1/4 cups

1 cup plain non-fat yogurt (regular or Greek)

Optional: Fresh or frozen fruit like strawberries, raspberries, blueberries, or peaches for topping


Instructions

  1. Dissolve the Gelatin: Add the boiling water to a blender, then mix in the sugar-free gelatin and blend on low for about 30 seconds until it dissolves completely.
  2. Cool the Mixture: In a measuring cup, mix the cold water and ice cubes to make 1 1/4 cups total chilled liquid. Add this to the blender and pulse a few times.
  3. Add the Yogurt: Spoon the plain non-fat yogurt into the blender. Blend on high for 30 to 45 seconds, or until the mixture is smooth, light, and frothy.
  4. Refrigerate: Divide the fluffy mixture evenly into 5 small bowls or ramekins. Chill in the refrigerator for at least 30 minutes until set.
  5. Serve: Add a topping of your favorite fruits, if desired, and savor this delicious treat!

Notes
