Ingredients
1 lb ground beef
¾ cup chopped onion
¾ cup shredded carrot
¾ cup diced celery
1 tsp dried basil
1 tsp dried parsley flakes
4 Tbsp butter, divided
3 cups chicken broth
4 cups peeled, diced potatoes
¼ cup all-purpose flour
2 cups Velveeta (cubed) or shredded cheddar cheese
1½ cups milk
¾ tsp salt
¼–½ tsp black pepper
¼ cup sour cream
Instructions

In a 3‑quart saucepan or pot, brown the ground beef over medium-high heat until fully cooked. Drain and set aside.

In the same pot, melt 1 tablespoon of butter and sauté the chopped onion, shredded carrot, basil, parsley, and diced celery until tender.

Pour in the chicken broth, add the diced potatoes and reserved ground beef, and stir to combine.

Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 10–12 minutes until the potatoes are fork-tender.

In a separate small skillet, melt the remaining 3 tablespoons of butter over medium heat.

Whisk in the flour and cook, stirring constantly, for 3–5 minutes until it forms a bubbly, golden roux.

Return the soup to a boil and stir for about 2 minutes, allowing it to thicken to a rich, creamy consistency.

Stir in the cheese, milk, salt, and pepper, continuing to mix until the cheese fully melts and blends into the soup.

Remove from heat and stir in the sour cream until smooth and creamy. Serve hot.
Notes
For extra richness, mix Velveeta with sharp cheddar. Dice potatoes evenly for best results. Freeze leftovers for up to 2 months.
