Ingredients
1 ½ pounds peeled and diced potatoes
2 tablespoons olive oil
1 tablespoon seasoned salt
3 boneless skinless chicken breasts, diced
1 tablespoon Cajun seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons butter
1 cup heavy whipping cream
1 cup shredded Parmesan cheese
Instructions
1.Prepare the potatoes: Start by rinsing the diced potatoes thoroughly to remove excess starch. Pat them dry using a clean towel. Place the dried potatoes in a large mixing bowl, drizzle with olive oil, and sprinkle with seasoned salt. Toss until evenly coated.
2. Cook the potatoes: Preheat your air fryer to 400°F. Place the seasoned potatoes in the air fryer basket and cook for 20 minutes, shaking the basket or tossing the potatoes halfway through to ensure even browning.
3. Cook the chicken: While the potatoes cook, heat a large skillet over medium-high heat. Add the diced chicken and season with Cajun seasoning, onion powder, garlic powder, and paprika. Sauté for 7-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Once fully cooked, remove the chicken from the skillet and set it aside.
4. Make the creamy sauce: Lower the skillet heat to low. Add the butter and allow it to melt completely. Pour in the heavy whipping cream and stir in the Parmesan cheese. Stir continuously until the cheese melts and the sauce begins to simmer. For extra Cajun flavor, sprinkle in a little more Cajun seasoning and a pinch of paprika.
5. Combine and serve: Add the cooked chicken and air-fried potatoes into the skillet. Gently toss everything together until evenly coated in the creamy sauce. Serve hot and enjoy every creamy, spicy, cheesy bite!
Notes
Cut potatoes evenly for consistent cooking.
Adjust Cajun seasoning to control spice level.
Roast potatoes in the oven if you don’t have an air fryer.
Fresh Parmesan melts best and gives richer flavor.
