Ingredients
2 tablespoons avocado oil, divided
4 boneless, skinless chicken breasts (about 2 pounds)

½ cup dry white wine or chicken broth
1 cup chicken broth
1 wheel (5.2 oz) Boursin cheese, any flavor, cut into 4–6 pieces
1 tablespoon chopped fresh chives (optional, for garnish)
Instructions
- Warm the Skillet: In a large skillet over medium heat, add 1 tablespoon avocado oil, tilting the pan to distribute the oil evenly.
- Season the Chicken: Liberally season both sides of each chicken breast with salt and freshly ground pepper.
- Sear the Chicken: Place the chicken in the skillet and sear for 4 minutes. Flip them, add the remaining tablespoon of oil, and cook for another 4 minutes. If the chicken isn’t fully cooked, cover the skillet, lower the heat, and continue cooking until the meat feels firm and springy.
- Set Aside Chicken: Remove the chicken from the pan and set it on a plate. If there are burnt bits in the skillet, carefully wipe them out with a paper towel.
- Deglaze the Pan: Pour in the wine or broth to deglaze, scraping up the browned bits with a spatula. Bring the liquid to a boil.
- Add Broth: Stir in the remaining chicken broth and cook until the mixture has reduced by half.
- Incorporate the Boursin: Add in the cheese pieces and whisk until melted into a smooth sauce.
- Finish the Dish: Return the chicken to the skillet, spoon the sauce over it, and heat until warmed through. Sprinkle with chives before serving.

To reheat, slice chicken and warm gently in a skillet over low heat with leftover sauce. Add a splash of broth or cream if needed.
