4 oz (113 g) cream cheese, softened (brick-style only)
1 Tablespoon salted butter, softened
4 cups (500 g) powdered sugar, plus more as needed and for dusting
1/2 teaspoon peppermint extract
1/8 teaspoon vanilla extract
Food coloring (optional)
Instructions
- In a stand mixer or large bowl with a hand mixer, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add 2 cups of powdered sugar with the mixer on low speed. Stir until completely blended.
- Add the peppermint and vanilla extracts. Mix well to incorporate.
- Continue adding the remaining powdered sugar a bit at a time, mixing thoroughly and scraping down the bowl as needed. The dough should be stiff and non-sticky. If the dough feels overly sticky, gradually mix in more powdered sugar until the consistency becomes firm and pliable, like play dough.
- If using food coloring, divide the dough as desired and mix in the colors until fully blended.
- Roll dough into small teaspoon-sized balls and place them on a wax-paper lined baking sheet.
- Dip a fork in powdered sugar and gently press down on each mint to flatten and imprint.
- Allow the mints to dry at room temperature for several hours until firm. Once dry, store in an airtight container in the refrigerator. Place wax paper between layers to prevent sticking.
Notes
Use only brick-style cream cheese. Add more powdered sugar if dough is sticky. Use molds for fun shapes and themes.
