Ingredients

Scale
  • 16 ounces (452g) full-fat brick-style cream cheese, softened to room temperature
  • 1 and 3/4 cups (175g) shredded sharp white cheddar cheese
  • 2 tablespoons chopped fresh chives, divided
  • 2 teaspoons chopped fresh parsley
  • 1 teaspoon light or dark brown sugar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup (108g) finely chopped dried cranberries, divided
  • 3/4 cup (100g) finely chopped pecans, divided

Instructions

  1. Beat the Cream Cheese: Using a stand mixer with a paddle attachment, beat softened cream cheese on medium-high until smooth, about 2 minutes.
  2. Mix in Ingredients: Add cheddar, 1 tablespoon chives, parsley, brown sugar, garlic powder, salt, pepper, and half the cranberries and pecans (about 6 tablespoons each). Stir until combined.
  3. Form the Cheese Ball: Use a spatula or your hands to shape the mixture into a ball.
  4. Prepare the Coating: In a small bowl, combine remaining chives, cranberries, and pecans. Spread on a plate and roll the cheese ball to coat.
  5. Chill: Wrap in plastic wrap and refrigerate for at least 1 hour or up to 5 days.
  6. Serve: Let sit at room temperature for 20–30 minutes before serving. Place on a platter with crackers or veggies.

Notes

  • Nut-Free Option: Replace pecans in the coating with crushed salted pretzels. To prevent sogginess, coat just before serving.
  • Storage: Wrap leftovers tightly in plastic wrap and refrigerate for up to 10 days. It’s best within the first 5 days.
  • Freezing: Wrap in plastic and foil to freeze for up to 1 month. Thaw in the fridge before serving.
