Description

2 boneless, skinless chicken breasts, diced

2 tbsp olive oil

For the Cowboy Butter Sauce:

4 tbsp unsalted butter

4 garlic cloves, minced

1 tbsp Dijon mustard

1/2 tsp smoked paprika

1/2 tsp red pepper flakes (adjust to taste)

1 tsp lemon juice

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped


Instructions

  1. Cook the Pasta: Boil linguine in well-salted water until it reaches an al dente texture. Drain and save 1/2 cup of the pasta water.
  2. Cook the Chicken: Heat olive oil in a skillet over medium heat. Lightly season the chicken with salt and pepper, then sauté until it turns golden and is cooked through. Set aside.
  3. Make the Sauce: Using the same pan, melt the butter and sauté the garlic until fragrant. Blend in the mustard, paprika, red pepper flakes, and lemon juice.
  4. Build the Creamy Base: Stir in heavy cream and slowly incorporate the Parmesan cheese until fully melted and smooth.
  5. Combine: Add the cooked chicken and linguine to the sauce. Mix thoroughly, using the reserved pasta water to fine-tune the sauce’s texture.
