Description

Cottage Cheese Protein Brownie is a rich fudgy single serve dessert packed with 20 grams of protein. Made with simple wholesome ingredients, this easy high protein brownie comes together quickly and bakes into the perfect chocolate treat for a healthy snack or dessert.

1 egg
1 third cup cottage cheese
1 quarter cup cocoa powder
3 tablespoons oat flour or almond flour
1 half teaspoon vanilla extract
1 to 2 tablespoons sweetener of choice
1 quarter teaspoon baking powder
Pinch of salt
Optional chocolate chips


Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly grease a small ramekin.
  2. Add egg, cottage cheese, cocoa powder, flour, vanilla extract, sweetener, baking powder, and salt to a blender. Blend until completely smooth.
  3. Stir in chocolate chips if using.
  4. Pour batter into prepared ramekin and smooth the top.
  5. Bake for 20 to 25 minutes until set around the edges and slightly soft in the center.
  6. Let cool for 5 minutes before serving.

Notes

Blend thoroughly to ensure the cottage cheese becomes smooth and creamy.
