Cottage Cheese Egg Bites are a quick, protein-rich breakfast or snack made with eggs, cheese, and bacon. They’re easy to meal prep, low in carbs, and freezer-friendly.
Ingredients
3/4 cup cooked bacon bits
7 large eggs
1 cup cottage cheese
1 cup shredded Colby Jack cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Cooking oil spray
Instructions

Preheat the Oven: Set your oven to 325℉ to get it ready for baking.

Mix the Base: In a medium mixing bowl, crack the eggs and whisk them thoroughly.

Add Ingredients: Stir in the cooked bacon bits, cottage cheese, shredded Colby Jack cheese, salt, and pepper until fully combined.

Prepare the Muffin Pan: Spray a 12-cup muffin pan with cooking oil to prevent sticking.

Fill the Cups: Evenly pour the egg mixture into each muffin cup.

Create Steam for Moisture: Place a pan of water on the lower oven rack.

Bake: Put the muffin pan on the upper oven rack and bake for 23–25 minutes, or until a toothpick inserted into the center comes out clean.

Notes
Use silicone muffin liners for easy removal.
