1 1/2 cups whipped cottage cheese (or blend until smooth)

1 cup almond butter

1 cup unsweetened cocoa powder

2/3 cup + 2 tablespoons sugar


Instructions

  1. Prep the Oven: Preheat your oven to 180°C (350°F). Line an 8×8-inch baking pan with parchment paper.
  2. Mix the Batter: In a large mixing bowl, combine whipped cottage cheese, almond butter, cocoa powder, and sugar. Whisk until the mixture is smooth, glossy, and lump-free.
  3. Add Mix-Ins (Optional): Fold in up to 1 cup of your favorite extras—think chopped chocolate, walnuts, or chocolate chips.
  4. Bake: Transfer the brownie batter into the lined pan, spreading it evenly to smooth the surface. Sprinkle more chocolate chips on top if desired.
  5. Cool and Slice: Once baked, allow the brownies to cool fully in the pan before cutting them into squares.

Notes

For best results, blend cottage cheese until smooth if not using pre-whipped.

Optional: Add 1/2 cup chocolate chips or chopped chocolate to the batter.
