2 cups pecans
2 cups sweetened shredded coconut
1 1/2 cups sugar
1 cup brown sugar
1/2 cup evaporated milk
1/2 cup light corn syrup
1/2 cup (1 stick) unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon salt
Instructions
- In a large saucepan over medium-high heat, mix together the granulated sugar, brown sugar, evaporated milk, corn syrup, and butter. Stir until everything is completely melted and smooth.
- Bring the mixture to a boil and let it cook for 3 minutes, stirring occasionally to prevent scorching.
- Remove the saucepan from the heat and quickly stir in the vanilla extract and salt.
- Fold in the shredded coconut and chopped pecans until well combined.
- Stir the mixture for another 3 to 4 minutes as it starts to cool and thicken.
- Drop spoonfuls onto wax paper-lined baking sheets using a tablespoon or small cookie scoop.
- Allow the cookies to fully set at room temperature, or place them in the freezer to speed up the process.
- Once firm, your cookies are ready to enjoy.
Notes
Toasting the pecans first adds more flavor and crunch.
For a less sweet version, use unsweetened shredded coconut.
Add a dash of cinnamon or nutmeg for a warm spice variation.
