Description

10 tablespoons unsalted butter
1 1 4 cups sugar
3 4 cup plus 2 tablespoons unsweetened cocoa powder
1 2 teaspoon salt
1 teaspoon baking powder
1 teaspoon pure vanilla extract
2 large eggs
1 2 cup all purpose flour
1 2 cup chocolate chips optional
1 2 cup chopped walnuts optional


Instructions

  1. Position your oven rack in the lower third of the oven and preheat to 325°F. Line an 8 inch square pan with parchment paper or foil and lightly grease it.
  2. In a heatproof bowl, combine the butter, sugar, cocoa powder, and salt. Place the bowl over a pot of gently simmering water and stir occasionally until the butter melts and the mixture becomes smooth.
  3. Remove from heat and let the mixture cool for 5 to 10 minutes. This step ensures the eggs will not cook when added.
  4. Stir in the vanilla extract until fully incorporated.
  5. Add the eggs one at a time, beating vigorously after each addition until the batter becomes smooth and glossy.
  6. In a separate bowl, mix together the flour and baking powder.
  7. Add the dry ingredients to the batter and stir thoroughly. Do not worry about overmixing. Stir about 40 strokes until the batter is thick and fully combined.
  8. If desired, gently fold in chocolate chips or chopped walnuts.
  9. Spread the batter evenly into the prepared pan.
  10. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Allow the brownies to cool completely on a wire rack before slicing and serving for the best texture and clean cuts.

Notes

Do not skip cooling the batter before adding eggs to prevent curdling
