Instructions
- Position your oven rack in the lower third of the oven and preheat to 325°F. Line an 8 inch square pan with parchment paper or foil and lightly grease it.
- In a heatproof bowl, combine the butter, sugar, cocoa powder, and salt. Place the bowl over a pot of gently simmering water and stir occasionally until the butter melts and the mixture becomes smooth.
- Remove from heat and let the mixture cool for 5 to 10 minutes. This step ensures the eggs will not cook when added.
- Stir in the vanilla extract until fully incorporated.
- Add the eggs one at a time, beating vigorously after each addition until the batter becomes smooth and glossy.
- In a separate bowl, mix together the flour and baking powder.
- Add the dry ingredients to the batter and stir thoroughly. Do not worry about overmixing. Stir about 40 strokes until the batter is thick and fully combined.
- If desired, gently fold in chocolate chips or chopped walnuts.
- Spread the batter evenly into the prepared pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool completely on a wire rack before slicing and serving for the best texture and clean cuts.
