  • 2 large eggs
  • 2 tbsp unsalted butter, melted and cooled
  • 2 tsp vanilla extract
  • 1 cup chopped, peeled apples (1/2 inch dice)
  • Vegetable oil (for frying)

For the Cinnamon Sugar Coating:

  • 3/4 cup granulated sugar
  • 1 tbsp powdered cinnamon
  • 1 tsp powdered allspice

Instructions

  • Heat vegetable oil in a deep pot to 350°F (about 15-20 minutes).
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and allspice.
  • In another bowl, mix buttermilk, eggs, melted butter, and vanilla. Pour the wet ingredients into the dry mixture, add apples, and stir until just combined.
  • Set up a work area with paper towels, a plate, and your cinnamon sugar mixture.
  • Once oil reaches 350°F, drop tablespoon-sized scoops of batter into the hot oil. Fry for 3 minutes, turning occasionally until golden brown.
  • Remove fritters with a slotted spoon, drain briefly, then roll them in cinnamon sugar.
