 - 1 cup buttermilk
 - 2 large eggs
 - 2 tbsp unsalted butter, melted and cooled
 - 2 tsp vanilla extract
 - 1 cup chopped, peeled apples (1/2 inch dice)
 - Vegetable oil (for frying)
 
For the Cinnamon Sugar Coating:
- 3/4 cup granulated sugar
 - 1 tbsp powdered cinnamon
 - 1 tsp powdered allspice
 
Instructions
- Heat vegetable oil in a deep pot to 350°F (about 15-20 minutes).
 - In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and allspice.
 - In another bowl, mix buttermilk, eggs, melted butter, and vanilla. Pour the wet ingredients into the dry mixture, add apples, and stir until just combined.
 - Set up a work area with paper towels, a plate, and your cinnamon sugar mixture.
 - Once oil reaches 350°F, drop tablespoon-sized scoops of batter into the hot oil. Fry for 3 minutes, turning occasionally until golden brown.
 - Remove fritters with a slotted spoon, drain briefly, then roll them in cinnamon sugar.
 - Serve warm and enjoy!
