Description

For the Loaf
2 cups plain flour
1.5 cups caster sugar
1 teaspoon ground cinnamon
2 teaspoons baking powder
1 half teaspoon salt
1 egg
1.5 cups milk
25 grams unsalted butter, melted
1 tablespoon vanilla extract
1 half teaspoon almond extract optional

For the Topping
1 quarter cup caster sugar, firmly packed
50 grams unsalted butter, melted
1 teaspoon ground cinnamon
1 half teaspoon ground nutmeg


Instructions

  1. Preheat your oven to 175C or 350F. Line an 8 x 4 inch loaf pan with baking paper, allowing extra paper to hang over the sides for easy removal.

  2. In a large mixing bowl, whisk together the dry ingredients. Combine plain flour, caster sugar, ground cinnamon, baking powder, and salt until evenly distributed.

  3. In a separate bowl, use electric beaters to blend the wet ingredients. Beat the egg, milk, melted butter, vanilla extract, and almond extract until smooth and fully incorporated.

  4. Pour the wet mixture into the dry ingredients. Gently stir until just combined. Avoid over mixing, as this can make the loaf dense instead of soft. A few small lumps are perfectly fine.

  5. Transfer the batter into the prepared loaf pan. Smooth the top with a spatula.

  6. Bake for 50 to 60 minutes, or until a skewer inserted into the center comes out clean. If the surface begins to brown too fast, gently tent the loaf with foil for the final 10 minutes of baking.

  7. Let the loaf cool in the pan for 10 minutes. Carefully lift it out using the baking paper and place it on a large sheet of paper or a cooling rack.

  8. While the cake is still warm, brush the entire surface including the sides with melted butter.

  9. In a small bowl, mix caster sugar, cinnamon, and nutmeg. Generously sprinkle this mixture over the buttered loaf, pressing lightly so it adheres.

Allow the cake to cool completely before slicing for clean, even pieces.
