Ingredients

Scale
  • 4 large eggs (room temperature, separated)
  • ¾ cup (150g) sugar
  • 1 tsp vanilla extract
  • ⅓ cup (30g) unsweetened cocoa powder
  • ¾ cup (95g) all-purpose flour
  • 1 stick (115g) butter (melted, cooled)
  • 2 cups (500ml) lukewarm milk
  • Powdered sugar (optional, for dusting)

Instructions

  • Preheat oven to 325°F (160°C). Grease and line an 8×8 inch baking dish with parchment paper.
  • Separate the eggs. In a large bowl, beat the egg whites until stiff peaks form. Set aside.
  • In a separate bowl, whisk the egg yolks, sugar, and vanilla until pale and creamy.
  • Add cocoa powder and flour to the yolk mixture, whisking until combined. Pour in the melted butter and mix until smooth.
  • Slowly incorporate the lukewarm milk, whisking continuously to avoid lumps.
  • Gently fold the beaten egg whites into the chocolate mixture, leaving some streaks for layering.
  • Pour the batter into the prepared baking dish and bake for 50-60 minutes, or until the top is set but still jiggles slightly.
  • Let the cake cool completely in the pan, then refrigerate for at least 2 hours.
  • Dust with powdered sugar if desired, slice, and enjoy!

Notes

  • Ensure eggs are at room temperature to help achieve the perfect texture.
  • Don’t overmix the egg whites; gentle folding helps create the layered effect.
  • Refrigerating the cake allows the custard to set, so don’t skip this step!
