Description

Chocolate Éclair Cake is a classic no-bake dessert with creamy vanilla pudding, graham crackers, and rich chocolate frosting. This easy recipe comes together in minutes and is perfect for parties, holidays, or any time you need a crowd-pleasing treat. Make it ahead and chill for best results!

Ingredients

Scale

2 (3.4-ounce) packages instant vanilla pudding mix

3½ cups cold milk

1 (8-ounce) container whipped topping, thawed

1 box graham crackers

1 can dark chocolate frosting

Instructions

In a medium bowl, whisk the instant vanilla pudding mix with cold milk until it becomes smooth and thick. Gently fold in the thawed whipped topping until fully blended.

Assemble the Layers:

Spread half of the pudding mixture over a layer of graham crackers placed in the bottom of a 9×13-inch dish.

Add a second layer of graham crackers on top of the pudding.

Spread the remaining pudding mixture evenly over the second layer.

Top with a final layer of graham crackers.

Add the Frosting: Warm the chocolate frosting in the microwave for about 20 seconds to soften it. Stir well, then spread it evenly over the top graham cracker layer.

Chill: Cover the dish and refrigerate for at least 8 hours (overnight is best) to let the graham crackers soften and the flavors come together perfectly.

Serve: Once chilled, slice into squares and serve cold.

Notes

For smoother frosting, microwave it briefly before spreading.

Cake tastes best after sitting overnight.

Swap in chocolate or cinnamon graham crackers for variation.

Homemade whipped cream or pudding can be used for a from-scratch version.

Great make-ahead dessert for up to 2 days in advance.
