Ingredients
Brownie Layer:
3/4 cup (170 g) unsalted butter, cut into pieces
1/2 cup (100 g) semisweet chocolate chips (or 4 oz bittersweet chocolate, chopped)
1/2 cup (50 g) natural cocoa powder
3/4 cup (150 g) granulated sugar
3/4 cup (150 g) light brown sugar, packed
2 large eggs + 1 large egg yolk
1 tsp vanilla extract
1/2 tsp table salt
1 cup (125 g) all-purpose flour
3/4 cup (150 g) semisweet chocolate chips (optional)
Strawberry Frosting:
1 cup (16 g) freeze-dried strawberries
3/4 cup unsalted butter, softened
2 cups (250 g) powdered sugar
1/8 tsp salt
2–4 tbsp heavy cream or milk
Chocolate Ganache:
4 oz (113 g) semisweet chocolate bar, finely chopped
1/2 cup (118 ml) heavy cream
Instructions
Brownie Layer
- Preheat your oven to 350F (175C) and line a 9×9-inch baking pan with parchment paper, letting the edges hang over two sides.
- In a large microwave-safe bowl, melt the butter and chocolate chips in 20-second intervals until smooth.
- Stir in cocoa powder, then whisk in both sugars, eggs, yolk, vanilla, and salt until fully combined.
- Add the flour and stir until just incorporated. Fold in extra chocolate chips if using.
- Spread the batter evenly in the pan and bake for 30 to 35 minutes, or until a toothpick comes out with fudgy crumbs. Let cool completely in the pan.
Strawberry Frosting
- Blitz freeze-dried strawberries in a food processor until they become a fine powder.
- In a bowl, beat the softened butter until creamy, then gradually mix in powdered sugar and salt.
- Stir in strawberry powder, then add cream or milk one tablespoon at a time until the frosting is spreadable.
- Spread evenly over the cooled brownies.
Chocolate Ganache
- Place chopped chocolate in a heatproof bowl. Pour heavy cream over it.
- Microwave for 45 seconds, then stir until smooth. Reheat in short bursts if needed.
- Pour over the strawberry layer and smooth out. Let set before slicing into squares.
Notes
Let brownies cool completely before frosting.
Use freeze-dried, not fresh strawberries for best texture.
For clean slices, use a sharp knife dipped in hot water and wiped dry between cuts.
Can substitute boxed brownie mix if preferred.
