Description
Moist, chocolatey, and naturally sweetened, this Chocolate Chunk Greek Yogurt Banana Bread blends ripe bananas with creamy Greek yogurt and rich chocolate chunks for a guilt-free indulgence you’ll love any time of day.
Ingredients
For the Banana Bread:
4 ripe bananas, mashed (about 1¼ cups)
½ cup plain whole milk Greek yogurt
¼ cup melted salted butter or coconut oil
¼ cup maple syrup or honey
2 large eggs, room temperature
2 teaspoons vanilla extract
1½ cups whole wheat pastry flour (or all-purpose flour)
1½ teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup semi-sweet or dark chocolate chunks
Optional Cinnamon Butter:
1 stick (½ cup) salted butter, room temperature
¼ cup pure maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Instructions
Preheat Oven: Set your oven to 350°F (175°C). Prep the Pan: Lightly coat a 9×5-inch loaf pan with nonstick spray or line it with parchment paper for easy removal.
Mix Wet Ingredients: In a large bowl, combine the mashed bananas, Greek yogurt, melted butter or coconut oil, maple syrup or honey, eggs, and vanilla extract. Stir until well blended.
Add Dry Ingredients: To the same bowl, add the flour, baking soda, ground cinnamon, and salt. Mix until just combined—avoid overmixing to ensure a tender loaf.
Fold in Chocolate: Gently fold in the chocolate chunks, ensuring they’re evenly distributed throughout the batter.
Bake the Bread: Transfer the batter into the prepared pan and spread it evenly. Bake for 50 to 60 minutes, or until a toothpick inserted in the center emerges clean or with just a few moist crumbs.
Cool: Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
Make the Cinnamon Butter (Optional): In a small bowl, whip together the room-temperature butter, maple syrup, vanilla extract, and cinnamon until light and creamy. Serve alongside warm slices of banana bread.
Notes
Use very ripe bananas for optimal sweetness and flavor.
Room temperature eggs and yogurt help the batter mix more evenly.
Customize with walnuts, pecans, or dried fruit if desired.
For a dairy-free version, use coconut oil and plant-based yogurt.
