Ingredients
5 small to medium potatoes
Olive oil
Salt, pepper, garlic powder, and paprika (for potatoes)
1 lb ground beef
1 onion, chopped
1/2 tsp salt
1/2 tsp pepper
1 tsp onion powder
1 tsp paprika
2 tsp chili powder
1 tbsp minced garlic
10 oz can diced tomatoes and green chiles, drained
15.5 oz can chili beans, drained
1 1/2 cups shredded cheddar cheese
2 green onions, chopped
Sour cream, for serving
Jalapeños, for serving
Instructions
- Prep the potatoes: Peel, wash, and dice the potatoes into small cubes. Toss them in olive oil and season generously with salt, pepper, garlic powder, and paprika.
- Cook the potatoes: Place the seasoned potatoes in an air fryer and cook at 400°F for about 25 minutes. Shake the basket a few times while cooking to ensure the potatoes crisp up evenly.
- Prepare the beef mixture: While the potatoes are cooking, heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook until the beef is browned and the onion is soft. Drain excess grease.
- Season the beef: Stir in salt, pepper, onion powder, paprika, chili powder, and minced garlic. Mix thoroughly to coat the beef in seasoning.
- Add tomatoes and beans: Add the drained diced tomatoes and green chiles along with the drained chili beans. Stir well and let the mixture simmer for a few minutes.
- Combine and top: Once the potatoes are done, add them to the skillet. Stir everything together and sprinkle shredded cheddar cheese over the top.
- Melt the cheese: Transfer the skillet to a preheated oven at 400°F for a few minutes until the cheese is melted and bubbly.
- Garnish and serve: Top with chopped green onions. Serve hot with sour cream and jalapeños on the side.
Notes
No air fryer? Bake potatoes on a sheet pan at 400°F for 25–30 minutes.
Use ground turkey or plant-based meat for variations.
