Ingredients
Scale
For the Chicken Scampi:
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
For the Garlic Parmesan Rice:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Cook the chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the sliced chicken breasts and cook for 5-7 minutes on each side until golden and fully cooked. Remove and set aside.
- Make the sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the chicken broth, lemon juice, Italian seasoning, salt, and pepper. Simmer for 3-4 minutes to let the sauce reduce.
- Toss chicken in sauce: Return the chicken to the skillet, coating it in the sauce. Let it cook for 2-3 more minutes. Garnish with parsley.
- Cook the rice: In a medium saucepan, bring chicken broth to a boil. Add rice and garlic. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
- Add Parmesan: Stir in the grated Parmesan, butter, salt, and pepper until everything is melted and creamy.
- Serve: Plate the chicken over the Garlic Parmesan Rice and enjoy!
Notes
- For extra flavor, add a sprinkle of red pepper flakes to the sauce.
- Substitute chicken thighs for a richer, juicier alternative.
- If you prefer, you can use brown rice instead of white rice, though cooking time will be longer.
