  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth

For the Garlic Parmesan Rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  • Cook the chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the sliced chicken breasts and cook for 5-7 minutes on each side until golden and fully cooked. Remove and set aside.
  • Make the sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the chicken broth, lemon juice, Italian seasoning, salt, and pepper. Simmer for 3-4 minutes to let the sauce reduce.
  • Toss chicken in sauce: Return the chicken to the skillet, coating it in the sauce. Let it cook for 2-3 more minutes. Garnish with parsley.
  • Cook the rice: In a medium saucepan, bring chicken broth to a boil. Add rice and garlic. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
  • Add Parmesan: Stir in the grated Parmesan, butter, salt, and pepper until everything is melted and creamy.
