Description

Chicken Sausage and Cauliflower Rice Skillet is a quick one pan meal made with flavorful sausage, tender vegetables, and a mix of brown rice and cauliflower rice. This easy recipe is perfect for busy weeknights, meal prep, and a balanced, satisfying lunch or dinner.


Ingredients

3 bell peppers, chopped
2 medium onions, chopped
12 oz sweet Italian chicken sausage, fully cooked and sliced
1 cup cooked brown rice
10 oz cauliflower rice, frozen
2 tbsp parsley, chopped
1/4 cup part skim mozzarella cheese
Olive oil spray

Spice Blend
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried basil
1/2 tsp kosher salt


Instructions

  1. Preheat a skillet over medium heat.
  2. Chop the bell peppers and onions, then mix the spice blend ingredients in a small bowl.
  3. Add olive oil spray to the skillet along with the vegetables and 2 teaspoons of the spice blend. Cook for 10 minutes, stirring frequently, until tender. Remove and set aside.
  4. Add the sliced chicken sausage to the same skillet with olive oil spray. Cook for about 5 minutes until browned. Remove and set aside.
  5. Add the frozen cauliflower rice to the skillet and cook for about 5 minutes until moisture evaporates.
  6. Stir in the cooked brown rice and remaining spice blend. Mix well.
  7. Return the vegetables and sausage to the skillet and stir to combine.
  8. Top with parsley and mozzarella cheese. Cover and cook on medium low heat until the cheese melts. Serve warm.

Notes

Use a high quality chicken sausage for the best flavor.

Make sure to cook the cauliflower rice until all moisture is gone to avoid a soggy texture.

This recipe is great for meal prep and reheats well.
