For the Chicken Pizza Crust
1 pound ground chicken preferably dark meat
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano

Pizza Toppings
½ cup pizza sauce
1 cup shredded mozzarella cheese about 4 ounces

Optional Toppings
1 ounce pepperoni thinly sliced
¼ cup black olives sliced


Instructions

  1. Preheat the oven to 425°F and line a rimmed baking sheet or pizza pan with heatproof parchment paper.
  2. In a medium bowl, mix the ground chicken, grated Parmesan cheese, garlic powder, and dried oregano until evenly combined.
  3. Spread the chicken mixture onto the prepared pan and shape it into a 12 inch circle about ¼ inch thick. Placing parchment paper on top and flattening with a rolling pin helps create an even crust. Remove the top parchment once shaped.
  4. Bake the crust for about 30 minutes or until firm and the edges are golden brown. The surface should appear dry. If moisture remains, continue baking for a few more minutes.
  5. Remove the crust from the oven and let it rest for about 5 minutes. Keep the oven on.
  6. Spread pizza sauce evenly over the crust and top with shredded mozzarella cheese. Add pepperoni and sliced olives if desired.
  7. Return the pizza to the oven and bake for 5 to 7 minutes until the cheese is melted and bubbly.
  8. Let the pizza rest for a few minutes, slice into six pieces, and serve warm.

Notes

Use ground chicken made from dark meat for the best flavor and texture. It contains more fat which helps keep the crust moist.

There is no need to add salt because the Parmesan cheese and toppings provide enough seasoning.

If liquid collects in the pan while baking, carefully drain it to help the crust become firmer.

Some people like to enhance the flavor by mixing Italian seasoning or fresh basil into the crust for a more aromatic herbal taste.

Leftovers can be stored in the refrigerator for up to four days or frozen for up to three months.
