4 cups grated zucchini

½ cup shredded mozzarella cheese

⅓ cup grated Parmesan cheese

1 large egg

1 teaspoon garlic parsley salt (or garlic powder + dried parsley)

1 cup shredded cheese of choice for topping (mozzarella, cheddar, or Mexican blend)


Instructions

  1. Prep the zucchini – Place grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step ensures a crisp crust.

  2. Make the crust mixture – In a large mixing bowl, combine zucchini, mozzarella, Parmesan, egg, and garlic parsley salt. Stir until well combined.

  3. Form the crust – Spread the mixture evenly onto a parchment-lined baking sheet, forming a rectangle about ½ inch thick.

  4. First bake – Bake at 425°F (220°C) for 15 minutes or until the crust is golden and firm.

  5. Add the cheese topping – Sprinkle your cheese of choice evenly over the baked crust.

  6. Second bake – Return to the oven for another 2–5 minutes, just until the cheese melts and bubbles beautifully.

  7. Slice and serve – Cut into breadstick shapes and serve hot for the best flavor and texture.

Notes

Removing as much liquid as possible from zucchini is key to a crispy crust.
