Ingredients
1 (4 oz) package Idahoan® Cheesy Hash Brown Casserole
1/2 cup black beans (optional)
4 eggs, cooked over easy
1 medium tomato, diced
2 green onions, sliced
1 ripe avocado, sliced
4 slices beef, fried crispy and chopped (optional)
Fresh cilantro, for garnish
Instructions
- Prepare the Idahoan Cheesy Hash Brown Casserole according to the package instructions. This will take about 20 minutes.
- If using, warm the black beans in a small saucepan or microwave until heated through.
- In a skillet, fry the beef until crispy, then chop into bite-sized pieces. Set aside on paper towels to drain excess grease.
- In the same or a clean skillet, cook the eggs over easy. You can cook them longer if you prefer a firmer yolk.
- Start assembling your bowls. Divide the black beans evenly into four serving bowls.
- Add a generous scoop of the prepared cheesy hash browns over the beans.
- Top each bowl with one cooked egg.
- Add diced tomatoes, green onions, sliced avocado, and beef bits.
