1/2 cup black beans (optional)

4 eggs, cooked over easy

1 medium tomato, diced

2 green onions, sliced

1 ripe avocado, sliced

4 slices beef, fried crispy and chopped (optional)

Fresh cilantro, for garnish


Instructions

  • Prepare the Idahoan Cheesy Hash Brown Casserole according to the package instructions. This will take about 20 minutes.
  • If using, warm the black beans in a small saucepan or microwave until heated through.
  • In a skillet, fry the beef until crispy, then chop into bite-sized pieces. Set aside on paper towels to drain excess grease.
  • In the same or a clean skillet, cook the eggs over easy. You can cook them longer if you prefer a firmer yolk.
  • Start assembling your bowls. Divide the black beans evenly into four serving bowls.
