Ingredients
2 tablespoons olive oil
8 ounces Carbonero peppers, chopped (or substitute Scotch Bonnets or Habaneros)
1 medium onion, chopped
2 ripe peaches, peeled, pitted, and chopped
1 cup apple cider vinegar
1/2 cup water (adjust for consistency)
1 tablespoon jerk seasoning blend
1 tablespoon brown sugar
Instructions

- Heat a medium-sized pot over medium heat and add the olive oil.
- Add the chopped peppers and onion. Sauté for 6-7 minutes until they soften.
- Stir in the chopped peaches and cook for another 2-3 minutes until soft.
- Pour in the apple cider vinegar and water. Add the jerk seasoning and brown sugar. Stir thoroughly.
- Turn the heat down low and let the mixture gently simmer for around 10 minutes so the flavors can fully develop.
- Remove from heat and let cool slightly. For a smoother sauce, blend until desired consistechieved.
- Optional: Strain the sauce for a thinner texture.
- Transfer into sterilized bottles or jars and refrigerate.

Let the sauce sit 24 hours in the fridge for deeper flavor.
Adjust thickness by adding more water as needed.
