Cajun Chicken Sloppy Joes are a quick, hearty meal bursting with Cajun spices, creamy chicken filling, sweet corn, and melted cheese. Perfect for busy nights when you want something comforting and full of flavor. These are anything but your average Sloppy Joes!

- 1 lb lean ground chicken
- 15 oz canned corn, drained
- 1/2 cup diced red onions
- 10.5 oz condensed cream of chicken soup
- 2 tbsp Cajun seasoning
- 1 tbsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup mayonnaise
- 4 large hamburger buns
- 1 cup shredded mozzarella and cheddar cheese blend
Instructions
- Preheat Oven – Preheat your oven to 400°F to toast the buns.
- Cook Chicken – Add ground chicken to a large sauté pan over medium-high heat. Cook, crumbling it as it browns.
- Add Veggies – Stir in the corn and red onions, and cook for about 3 minutes.
- Season and Simmer – Add the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Stir to combine and reduce heat to low.
- Make it Creamy – Stir in the mayonnaise until fully mixed.
- Toast Buns – Arrange buns on a baking sheet and toast for 4-5 minutes until lightly browned.
- Assemble – Spoon the chicken mixture onto the bottom buns, sprinkle with cheese, and place the top buns on.
- Serve and Enjoy!

- Adjust the spice level to taste by starting with 1 tbsp Cajun seasoning and adding more if desired.
- For a dairy-free option, use dairy-free mayo and cheese.
