2 tbsp granulated sugar

2 tbsp cornstarch

1/2 tsp ground cinnamon

3 tbsp lemon juice (about 1 medium lemon)

3 tbsp unsalted butter, softened and cubed

Cookie Topping

1/2 cup (1 stick) unsalted butter

1 (17.5 oz) package sugar cookie mix (e.g., Betty Crocker™)

1/2 tsp ground cinnamon

1 large egg

1 tbsp coarse sparkling sugar


Instructions

  1. Preheat and prep: Set your oven to 375°F. Lightly coat a 13×9-inch baking dish with cooking spray.
  2. Create the fruit base: Arrange thawed peach slices in the baking dish. Sprinkle with granulated sugar, cornstarch, cinnamon, and lemon juice. Mix gently to combine. Dot the mixture with cubes of softened butter.
  3. Brown the butter: In a saucepan over medium heat, cook the 1/2 cup butter for about 8–10 minutes, stirring frequently, until it turns golden and smells nutty. Watch closely and remove it from the heat as soon as it reaches a golden hue.
  4. Make the topping: Pour the browned butter into a large bowl. Add the cookie mix, cinnamon, and egg. Stir with a wooden spoon until a soft dough forms.
  5. Assemble: Drop spoonfuls of dough evenly over the peach mixture. Sprinkle with sparkling sugar.
  6. Bake: Place in the oven for 30 to 35 minutes, or until the cookie topping is golden brown and the peach filling is bubbling around the edges.

Notes
