Ingredients
Fruit Base
2 (12 oz) bags frozen sliced peaches, thawed (about 5 cups)
2 tbsp granulated sugar
2 tbsp cornstarch
1/2 tsp ground cinnamon
3 tbsp lemon juice (about 1 medium lemon)
3 tbsp unsalted butter, softened and cubed
Cookie Topping
1/2 cup (1 stick) unsalted butter
1 (17.5 oz) package sugar cookie mix (e.g., Betty Crocker™)
1/2 tsp ground cinnamon
1 large egg
1 tbsp coarse sparkling sugar
Instructions
- Preheat and prep: Set your oven to 375°F. Lightly coat a 13×9-inch baking dish with cooking spray.
- Create the fruit base: Arrange thawed peach slices in the baking dish. Sprinkle with granulated sugar, cornstarch, cinnamon, and lemon juice. Mix gently to combine. Dot the mixture with cubes of softened butter.
- Brown the butter: In a saucepan over medium heat, cook the 1/2 cup butter for about 8–10 minutes, stirring frequently, until it turns golden and smells nutty. Watch closely and remove it from the heat as soon as it reaches a golden hue.
- Make the topping: Pour the browned butter into a large bowl. Add the cookie mix, cinnamon, and egg. Stir with a wooden spoon until a soft dough forms.
- Assemble: Drop spoonfuls of dough evenly over the peach mixture. Sprinkle with sparkling sugar.
- Bake: Place in the oven for 30 to 35 minutes, or until the cookie topping is golden brown and the peach filling is bubbling around the edges.
- Cool and enjoy: Allow the cobbler to cool for approximately 10 minutes before serving.
