4 cups pancake mix

3 cups water

1 lb breakfast sausage, browned and drained

1 1/2 cups fresh blueberries

1/3 cup maple syrup

Instructions

  • Preheat and Prep
    Start by preheating your oven to 375°F. Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  • Cook the Sausage
    In a skillet over medium heat, brown 1 pound of breakfast sausage. Make sure it’s fully cooked, then drain the grease thoroughly and set it aside.
  • Mix the Batter
    In a large mixing bowl, combine 4 cups of pancake mix with 3 cups of water. Mix until smooth, following the instructions on your pancake mix box.
  • Add the Fillings
    Stir in the cooked sausage, 1 1/2 cups of fresh blueberries, and 1/3 cup of maple syrup. If you like, reserve a small portion of sausage and blueberries to sprinkle on top for presentation.
  • Pour and Bake
    Pour the pancake mixture into the prepared baking dish. If you reserved some toppings, scatter them across the top of the batter. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
  • Serve and Enjoy
    Allow the casserole to rest for a few minutes before cutting into it. Add a generous drizzle of maple syrup over each slice before serving for a sweet and tasty final touch.

Notes

You can assemble this casserole the night before and bake it fresh in the morning.

Frozen blueberries can be used—just add them straight from the freezer.
