Description

Blueberry Lush is a chilled, no-bake dessert featuring layers of buttery graham cracker crust, creamy cheesecake filling, blueberry pie topping, and fluffy whipped cream. Perfect for gatherings or weeknight treats!

1 sleeve (9 crackers or 4.8 oz) graham crackers

1 cup chopped pecans

1/2 cup melted butter

2 tbsp granulated sugar

8 oz cream cheese, softened

1 cup powdered sugar

16 oz non-fat whipped topping (2 tubs), divided

2 cans (21 oz each) blueberry pie filling

2 tbsp chopped pecans (optional, for garnish)


Instructions

  • Preheat your oven to 350°F.
  • Make the crust: In a food processor, combine graham crackers and pecans. Pulse until finely chopped. Stir in melted butter and sugar until the mixture is evenly coated.
  • Form the base: Press the crust mixture firmly into the bottom of a 13×9-inch baking dish. Bake for 8 minutes, then allow to cool completely.
  • Prepare the filling: In a large bowl, beat softened cream cheese and powdered sugar until smooth. Add 1 cup of whipped topping and beat again until creamy and lump-free. Gently fold in the rest of the whipped topping from one container.
  • Assemble the layers: Spread the cream cheese mixture over the cooled crust. Then evenly layer both cans of blueberry pie filling on top.
  • Top it off: Spread the second container of whipped topping over the blueberry layer. Smooth out evenly.
  • Optional garnish: For extra texture and presentation, sprinkle chopped pecans over the top layer.
  • Refrigerate: Cover the dish and place it in the refrigerator for a minimum of 2 hours, or ideally, let it chill overnight to enhance the texture and flavor.

Notes

For best results, make this dessert a day ahead so the layers have time to set. You can swap in other pie fillings like cherry or strawberry for a twist.
