For the glaze (optional):
- 1 cup powdered sugar
- 1–2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk the melted butter and sugar until smooth. Add the eggs, vanilla extract, lemon zest, and lemon juice, mixing until combined.
- Gently fold in the flour, salt, and baking powder (if using) until just incorporated. Avoid overmixing.
- Carefully fold in the blueberries. Pour the batter into the prepared pan, smoothing the top.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out with moist crumbs.
- Let the blondies cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, mix powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over cooled blondies. Slice and enjoy!
