Description

Blueberry Lemon Blondies are a delightful mix of tangy lemon and sweet blueberries, baked into soft, chewy bars. These easy-to-make treats are perfect for any occasion, and the optional lemon glaze adds a burst of citrus flavor. Ready in under an hour, they’re sure to become a family favorite!

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest (about 1 lemon)
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 ½ cups fresh blueberries
  • ½ teaspoon baking powder (optional)

For the glaze (optional):

  • 1 cup powdered sugar
  • 12 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  • In a large bowl, whisk the melted butter and sugar until smooth. Add the eggs, vanilla extract, lemon zest, and lemon juice, mixing until combined.
  • Gently fold in the flour, salt, and baking powder (if using) until just incorporated. Avoid overmixing.
  • Carefully fold in the blueberries. Pour the batter into the prepared pan, smoothing the top.
  • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out with moist crumbs.
  • Let the blondies cool in the pan for 10 minutes, then transfer to a wire rack.
  • For the glaze, mix powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over cooled blondies. Slice and enjoy!

Notes

  • Use frozen blueberries if fresh ones aren’t available—no need to thaw them.
  • For a nutty twist, add ½ cup chopped walnuts or almonds.
  • These blondies can be stored at room temperature for up to 3 days, or in the fridge for a week.
  • You can freeze the blondies for up to 2 months; thaw at room temperature before serving.
