Description

Beef Burrito Casserole is a hearty, cheesy, and budget friendly dinner made with seasoned ground beef, rice, black beans, salsa, and cream cheese. This easy baked casserole is perfect for busy weeknights, meal prep, and customizable toppings.


Ingredients

1 tablespoon cooking oil
1 half pound ground beef
1 clove garlic, minced
1 pinch salt
4 cups cooked rice, chilled if possible
1 15 ounce can black beans, rinsed and drained
1 16 ounce jar salsa
4 green onions, sliced and divided
1 half tablespoon chili powder
4 ounces cream cheese
1 cup shredded cheddar cheese


Instructions

  1. Start by preheating your oven to 350 degrees Fahrenheit so it is ready once the casserole is assembled.
  2. Place a skillet over medium heat and add the cooking oil. Add the ground beef, minced garlic, and a pinch of salt. Cook until the beef is fully browned and cooked through. If needed, carefully drain any excess fat to keep the casserole from becoming greasy.
  3. Rinse and drain the black beans thoroughly. Slice the green onions and set half aside for garnish later.
  4. In a large mixing bowl, combine the cooked rice, browned beef, black beans, half of the green onions, salsa, and chili powder. Stir until everything is evenly distributed and coated in the salsa.
  5. Lightly coat a 3 quart casserole dish with non stick spray. Spread half of the rice and beef mixture evenly across the bottom.
  6. Add small spoonfuls of cream cheese across the surface so it is distributed throughout the casserole.
  7. Layer the remaining rice and beef mixture on top, smoothing it into an even layer.
  8. Seal the casserole dish securely with foil to keep the moisture inside. Bake for 25 minutes.
  9. Carefully remove the foil, spread the shredded cheddar evenly across the surface, and place it back in the oven. Continue baking for another 5 to 10 minutes, or until the cheese is melted and lightly bubbly.
  10. Finish by sprinkling the remaining sliced green onions over the top right before serving. Allow the casserole to rest for a few minutes before cutting to help it hold its shape.

Notes

Chilled rice works best to prevent a sticky texture.

Lean ground beef reduces excess grease.

Add jalapeños or spicy salsa for more heat.

Leftovers store and reheat well for meal prep.
