Ingredients
1 lb lean ground beef
1 small yellow onion, diced
1/2 cup beef bacon, cooked and chopped
1/4 cup mayonnaise
1/4 cup ketchup
1 tablespoon yellow mustard
1 tablespoon sweet pickle relish
2 teaspoons onion powder
12 slices white bread
1/2 cup (1 stick) butter, softened
2 cups mozzarella cheese, grated
2 cups cheddar cheese, grated
Kosher salt and black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium-high heat, cook ground beef with a pinch of salt and pepper until almost done.
- Add onions, cook 3 more minutes until softened. Drain excess grease.
- Remove from heat. Stir in beef bacon, mayo, ketchup, mustard, relish, and onion powder.
- Butter one side of 6 bread slices and cut in half. Place butter-side down in a 9×13-inch baking dish.
- Sprinkle with half the mozzarella and cheddar.
- Spoon beef mixture evenly over the cheese layer.
- Top with remaining cheese.
- Butter remaining bread slices, cut in half, and place butter-side up on top.
- Bake for 20–25 minutes until golden and melty. Let sit before serving.

Swap in ground turkey or chicken for a leaner option.
Use sourdough or brioche for extra texture.
Reheat in oven or toaster oven to keep bread crispy.
Avoid microwaving to prevent sogginess.
