2 pounds of boneless, skinless chicken breasts, diced into 1-inch pieces

1 tablespoon extra virgin olive oil

1½ teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon kosher salt

1 teaspoon black pepper

For the Bang Bang Sauce:

1 cup mayonnaise

⅔ cup Thai sweet chili sauce

1 to 3 tablespoons Sriracha (adjust to taste)


Instructions

  • In a large bowl, combine chicken with olive oil, paprika, garlic powder, salt, and pepper. Toss until evenly coated.

  • Thread seasoned chicken pieces onto skewers and refrigerate while preparing the sauce.

  • In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, and Sriracha. Reserve half the sauce for dipping.

  • Brush remaining sauce generously over the chicken skewers.

  • Grill Method: Preheat grill to medium-high. Grill each skewer for 6–8 minutes per side, or until internal temperature reaches 165°F.

  • Air Fryer Method: Air fry skewers at 400°F for 10–12 minutes, flipping halfway.

  • After cooking, brush with reserved sauce and serve hot.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning.

Cut chicken into uniform sizes for even cooking.

Adjust spice level by modifying the amount of Sriracha in the sauce.
